Mourvèdre 90 %, Syrah 10 %
Terroir
Le Castellet; bedrock of Mesozoic limestone and marl from the Late Cretaceous period, suitable for fine cuvées, planted with five typical varieties of the appellation. South-facing terraces with views towards the limestone ridges dominating the 'Bec de l'aigle'. Selection of grapes from the oldest vines.

Environmental. Yield 30 hl/ha.
Harvesting and vinification
Since 2008, all work in the vineyard and cellar has been carried out manually in the organic farming regime. Long maceration in wooden vats, traditional maturation of 18 months in small and large barrels depending on the vintage.
Sensory properties
Dark ruby red colour. Intense spicy aroma with notes of blackberries, blackcurrants, liquorice, pepper, truffles and undergrowth. The palate is well structured, powerful, creamy, elegant with fine tannins.
Pairing with dishes
A well-blown wine will accompany game, marinated meats, spicy dishes, lamb and cheeses.
