Ollioules, at the foot of the Le Gros Cerveau massif; a mixture of clay and clay with limestone and mineral salts.

30-50 years
Agriculture
Ecological. preservation of organic life in the soil, natural grassing. Controlled yield 35 hl/ha.
Harvesting and vinification
Hand harvesting and strict selection of the best grapes. Thanks to the balance between strong heat and favourable rains, the grapes have reached ideal ripeness without too much stress. The clay-limestone terroir of the Triassic, unique and unparalleled, gives the wine minerality, freshness and ageing potential, just like the red with which the rosé shares grape varieties.
Sensory properties
The colour is young with sparkle, with old pink reflections. Behind the dominant pink grapefruit and citrus zest, the nose shows subtle notes of rose petal, passion fruit and raspberry candy. In the mouth, its rich spiciness is beautifully integrated into a rich exotic fruitiness with a long and persistent salty aftertaste.
Pairing with dishes
It will delight as an aperitif with cured meats (e.g. rustic terrine with cucumbers), but also in combination with all types of cuisine: Provençal, exotic, perfectly accompanies fish and seafood and meat on barbecue.

10-12 °C
Archiving potential
Drink young, but even after 15 years and more, this is a real rosé vin de garde.
