Varietal composition
It consists of several grape varieties, each of which brings a part of its personality to the wine. Grenache brings a fruity touch, Cinsault contributes to the wine's finesse, Carignan gives it its acidity and spiciness and the Mourvèdre variety gives the wine its backbone and structure. Together they create the overall harmony of the wine.
Terroir
Foothills of the village of La Cadière d'Azur, northern slopes of the hill; clay-calcareous.
Age of vineyards
Between 40 and 60 years
Agriculture
Environmental. No weed killers or chemicals (insecticides) have been used for many years.
Harvesting and vinification
Each parcel is harvested by hand and vinification takes place separately in vats without the addition of yeasts, as the grapes already have their natural yeasts on the skin of the berries: pruine. Once fermentation is complete, the wines are aged in large barrels of 25 to 60 hectolitres for 18 months. The bottling is done in the cellar all at once, which gives the same wine from the first to the last bottle. There is no clarification or filtration of the wines, the aim being to preserve all its fruity complexity.
Pairing with dishes
An ideal wine to pair with savoury and spicy dark meats, roasted or grilled, grilled vegetables, cured meats, camembert cheese, olives and sun-dried tomatoes.
Serving temperature
16-18 °C
Archiving potential
10-30 years. As a young one, it is recommended to decant it into a decanter.
