Agriculture
Organic. Preservation of organic life in the soil, natural grassing, no chemicals, fertilizing the soil every two years. Green harvesting is strict to leave only a minimum of grapes. Spraying is applied late and reduced to a minimum to preserve any natural sediment on the grapes. Only sulphur and copper strengthen the bushes. Harvesting and vinification
Hand harvesting into small crates and selection of grapes. Traditional vinification, de-stemming of grapes, fermentation in a stainless steel tank for 4 weeks at 25-30 °C, twice daily stirring of the lees, aging for 18 months in 4000 l oak barrels before bottling without filtration, followed by a further 6 months before release.
Sensory properties
Deep red colour with purple highlights. Notes of dark fruits, mulberries and blackcurrants can be found in the aroma. The palate is clean, full, complex, mineral and structured, with a beautiful fresh persistence and integrated tannins. Compared to the younger vintages, the wine gives a softer impression, more open and approachable.
Pairing with dishes
Suitable for cured meats and cheeses, perfect accompaniment to grilled and roasted meats, game, beef on carrots and strong sauces.
Serving temperature
15-18 °C, it is recommended to open the bottle 2 hours in advance, without decanting.
Archiving potential
The wine reaches harmony after 3 years, but can age for 15 years or more.
